Phaksha Bexuk

Yields4 Servings

 1 lb Boiled pork shoulder steak cut into pieces
 7 Dry red chilies (including as many seeds as you are comfortable with)
 1 tsp Chili Powder
 1 Inch piece of ginger (minced)
 1 Yellow onion (Sliced)
 3 Potatoes (Chopped)
 2 Tomatoes (Diced)
 1 tsp Salt (more or less to according to taste)
 ½ cup water

Boil the cubed pork for 30-45 minutes until cooked through.

Place pork in a skillet. If your pork is not very fatty you may need to add a bit of oil.

Add the dried chilis and chili powder to the skillet

Add water and cover to let the chilis soften

Add potatoes and more water if needed, cover and continue to cook for 5-10 minutes

Add tomatoes, ginger, and onion. Cook 5 more minutes to soften the onions.
