Azeri Dolma

Azeri Dolma - Three Sisters

Ingredients:
 1 lb Ground beef
 1 lb Ground Lamb
 6 Tomatoes
 6 Green Bell Peppers
 2 Eggplants
 1 Yellow Onion
 2 cups Green Beans
 3 tbsp Chopped fresh basil
 2 tsp Cinnamon
 2 tbsp Butter
 0.50 cup Water
 2 cups Cooked white rice
 Salt
 Black Pepper

Directions:

Mix the ground meat and the onions and brown it in a large pan with the butter. Set aside.

Bring to boil a large pot of water with a pinch of salt. Add the eggplant to the water and boil it until they're soft.

Slice the tops off of bell peppers and tomatoes and hollow them out (save the tomato's insides for later)

Pepper and salt the peppers' and tomatoes' insides and them set aside.

Rub the eggplants between your hands until they're soft.

Cut deep slits in the eggplants and use a spoon to remove most of the flesh. Leave enough flesh to maintain the structure of the eggplant.

Pepper and salt the eggplants' insides.

Place the tomatoes, peppers, and eggplant pieces skin side up and put them in the oven to broil until they have a slight char.

Add the insides of the tomatoes, rice, basil and the cinnamon to the meat and mix it.

Stuff all three vegetables with the meat mixture.

Spread the green beans out in the pan.

Place the stuffed vegetables on the beans and add enough water to cover the veggies' bottoms. Cover the pan to heat and steam the veggies

Heat it moderately for 20 minutes and serve the Dolma.
