Gâteau du Nauru

Yields12 Servings

 2 cups Flour
 ¾ tsp Baking Soda
 1 tsp Nutmeg
 1 cup Chopped Pineapple
 ½ cup Sugar
 1 tsp Vanilla
 3 Bananas
 2 Eggs
 ¼ cup Whole Milk
 ½ cup Coconut Oil

In a medium bowl mix together the flour, baking soda, and nutmeg. Set aside.

Add the vanilla to the sugar and put it on a silicone baking mat or parchment paper. Bake for 5ish minutes at 350 to dry the sugar out a bit. Be careful not to let the sugar start to melt.

Beat the eggs with the milk and coconut oil until well mixed.

Add the sugar to the egg mixture.

Mash the bananas and then add to the egg mixture.

Slowly add the flour mixture in to the egg mixture until well mixed. Stir in the chopped pineapple. Once well combined pour into a bread pan.

Bake at 350 Degrees for 1hr and 10 minutes. Make sure the blade of a knife comes out clean when it is done. Eat and enjoy!
