For the Dough:
 4 cups Flour
 5 tbsp Oil
 1 ½ cups Warm Water
 1 tbsp White Vinegar
 1 tsp Salt
For the Filling:
 2 cups Cottage Cheese
 7 tbsp Melted Butter
 ½ cup Sour Cream
 Salt
 Pepper
For the topping:
 ½ cup Asiago cheese [Grated]
 ½ cup Panko Bread Crumbs

Make the dough. Mix together the flour and salt and then pour in warm water, vinegar and oil. Knead the dough [I started it in the bowl of a stand mixer with the bread hook attachment, but if you dont have a stand mixer you can do the entire process by hand]. Knead until it reaches a smooth and elastic consistency adding flour as necessary to get the desired consistency. Dough should not be too sticky.

Place the dough in a clean bowl, brush with a bit of oil, cover with a towel and let rest for 30 minutes.

Make the filling. Mix the sour cream, cottage cheese, salt and pepper. Set aside.

Set a clean tablecloth out and dust with flour. Roll the dough with a rolling pin until thin, then stretch with your hands until it is so thin you can almost see through it. Try to stretch it into a very large rectangle.

Brush the melted butter all over the dough. Spread the filling along the long edge of the rectangle in a line.

Use the tablecloth to help you roll the dough into a log. Try to roll it somewhat tightly.

Using your hands separate the filling so that there are 6-8 equal sections. Try to press the dough together before cutting the sections apart to help seal the filling in. Use a plate to cut the log into sections.

Place each of the pockets into a baking dish. Cover with asiago cheese and top with bread crumbs.

Bake at 400 Degrees for 20-30 minutes until the cheese is golden brown.
